Incredible Brunch at Chambar in Vancouver Canada
We tried out a lot of restaurants while visiting Vancouver and one of our favorite places was Chambar, located just behind the Airbnb we were staying at in downtown Vancouver. We were in the mood for some good brunch and read rave reviews on how awesome this restaurant was, so we had to see for ourselves.
As soon as you step inside, you will be blown away by the ambience and decor. The interior was spacious with interesting light fixtures, exposed brick walls, wooden tables and leather chairs. There was also lots of natural light coming in, which we love because it always makes for great pictures. Once the host sat us down at our beautiful table, the friendly and handsome manager, Ondrej (who is originally from Czech Republic), came to greet us and recommended all the great drinks and entrees Chambar had to offer.
Ondrej started off listing all the wonderful drinks and the notable ones we ordered were the Lassi Sauvage and Becher Mule. The Lassi Sauvage was made with freshly squeezed fruit & vegetable juice, house yogurt, basil and cane sugar. It was a great, healthy drink with lots of flavor and they describe it as their “spin on the South-Asian staple”. The Becher Mule was made with Żubrówka vodka, Becherovka, mint tea syrup, yuzu juice and house-made ginger beer. The house-made ginger beer is what got us interested in this drink and it was superb. We also loved the description of this drink, which was “Colder & spicier than your last Tinder date”.
Ondrej continued to chat with us about what we had planned for the day and gave some recommendations on cool spots to check out in Vancouver. We thought Ondrej was going to be our waiter but then a beautiful woman (I swear they are all models at this restaurant) walks up to us and says that she’s actually our server and Ondrej is just super friendly and likes to talk to his customers. We thought that was so sweet of Ondrej to take so much time talking to us. Our server’s name was Cassandra and we found out that she writes a blog too, so if you are looking to follow a Canadian fashion blogger, check her out at Pacific Beauty.
Between the 5 of us, we ordered the L'Omelette du Jour, Bon Matin, Free Range Eggs and Fresh Fruit. When the L'Omelette du Jour came out to our table, we were oohing and aahing over the unique presentation. The omelette came out in open-face style and it was so beautifully presented with seasonal vegetables like the brussels sprouts and arugula. We were also impressed with the simple Free Range Eggs. We all ordered scrambled eggs and it was the most delicious bowl of eggs we’ve ever had. The eggs were so fluffy and they added extra flavors with some herbs and green onions. Who knew simple eggs could be so amazing?
Of course, we had to end our meal with Chambar’s famous waffles. You can select from a variety of toppings that come on the side and we chose Yogurt, Dark Chocolate, and White Chocolate Pistachio Rosewater. The waffles were amazing and all the toppings were delicious.
After our table was cleared out, Ondrej surprised us with a complimentary dessert. I wish I could remember what it was called but the red pieces were soft and jelly-like with a hint of sweetness. The small cakes reminded me of madeleines.
We absolutely loved everything about Chambar and were tempted to stop by another morning but since we were only there for the weekend, we only had so much time to spare and there were other restaurants we wanted to check out. If we were visiting Vancouver for a week, we would have definitely gone back for more. A huge thank you to Ondrej and Cassandra for being such wonderful hosts and making our experience at Chambar so memorable.
